Job Description

The Executive Pastry Chef position is a senior-level executive chef role within UNT’s Dining Services located in Denton. UNT Dining Services represents the largest self-supported food service operation in North Texas, boasting an impressive portfolio of five dining halls, more than 20 retail locations, an upscale restaurant, a hydroponic garden, a central scratch bakery, and full-service catering. The department is nationally acclaimed for its innovative, trendsetting culinary programs, receiving accolades such as the Vegan Recipe Award and ranking No. 2 nationwide for best college food by Delish.com. The Executive Pastry Chef plays a critical role in sustaining and elevating this reputation by leading bakery excellence across catering, retail, and cafeteria services.

This role demands a highly skilled culinary professional with a passion for baking and innovation, responsible for ensuring the production of superior quality baked goods using advanced preparation techniques and technology. The chef will oversee daily kitchen activities, enforce culinary standards, manage complex production schedules, and maintain inventory and cost control measures to optimize operations. As a visible leader, the Executive Pastry Chef will collaborate closely with other department heads, such as the Director of Operations and Catering Director, to deliver exceptional baked products for varied events and meal services. This position offers a salary commensurate with experience and is classified as a full-time, staff role eligible for TRS retirement benefits. Job Requirements

  • Bachelor's degree in related field
  • Five years of professional related experience or equivalent combination of education, training, and experience
  • Food Safe Certification or ability to obtain within 6 months
  • Ability to work early morning hours
  • Capable of lifting and moving objects up to 50 pounds
  • Ability to perform repetitive hand motions
  • Effective communication skills
  • Experience with high-volume bakery production
  • Willingness to work varied hours
  • Ability to manage multiple tasks simultaneously
  • Experience in managing production schedules and food cost controls

Job Qualifications

  • Bachelor's degree in a related field
  • Five years of professional related experience or equivalent combination of education, training, and experience
  • Expert skill in managing culinary expectations and output for upscale catering and high-volume production
  • Ability to diagnose and correct production issues efficiently
  • Effective communication with diverse skill levels
  • Proficiency in food production scheduling
  • Knowledge of federal, state, and local food regulations
  • Ability to standardize and document kitchen processes
  • Passion for culinary innovation and mentoring
  • Experience with product research and development
  • Preferred leadership experience in high-volume bakery or pastry settings
  • Strong scratch baking skills including doughs, breads, pastries, cookies, laminated products, ice creams, and confections
  • Proven skills in production scheduling, ordering, inventory, and food cost control
  • Experience with gourmet cakes
  • Ability to lead, train, and hold teams accountable
  • Food Safe Certification or willingness to obtain within 6 months

Job Duties

  • Ensures all cafeterias have appropriate quality baked goods on hand as needed
  • Ensures all retail units receive specified baked goods and routinely develops new products for limited-time offers
  • Collaborates with the Director of Operations and Catering Director to ensure proper presentation and delivery of baked goods for catering
  • Checks all baked goods before distribution to maintain desired product standards
  • Regularly communicates with Dining Hall managers and directors to ensure baked goods meet expectations
  • Creates and maintains product cost books for each item produced
  • Standardizes products for processes, presentation, and procedures
  • Maintains inventory of ingredients and finished products
  • Posts and adjusts weekly work schedules for bake shop personnel
  • Ensures high-quality food presentation and taste at all university functions
