Job Requirements

  • culinary arts degree or equivalent training
  • seven or more years of experience in the culinary industry
  • minimum two years in a culinary management role
  • excellent written and verbal communication skills
  • knowledge of employment and industry-related laws
  • conflict management and negotiation abilities
  • ability to handle multiple tasks and shifting priorities
  • familiarity with Microsoft Word, Excel and Outlook
  • strong interpersonal and professional demeanor
  • high attention to detail and organizational skills
  • valid state food handler's license or licenses

Job Duties

  • maintains responsibility for day-to-day operation of the kitchen
  • develops and implements procedures to ensure work practices meet or exceed standards
  • communicates daily with general manager for updates and revisions
  • maintains food quality, presentation, sanitation and safety standards
  • ensures timely and courteous follow-through on client, guest, and team member requests
  • assists in staff selection, supervision, training, scheduling, and evaluation
  • demonstrates positive leadership that empowers employees
  • monitors food and labor costs
  • conducts daily walk-throughs of storage and food preparation areas
  • utilizes specification sheets to prepare requirements and maintain par levels
  • prepares and manages creation of new menu items
  • ensures consistent and attractive food presentation
  • supervises line cooks for quality and presentation
  • handles customer requests timely
  • sets up and cleans food preparation areas
  • ensures presentation standards for all items
  • reads and interprets recipes
  • conducts product inventories, ordering and receiving
  • maintains team grooming, sanitation and food handling standards
  • responsible for opening and closing kitchen procedures
