Job Requirements
- Minimum education or equivalent experience in culinary management
- 2-3 years of kitchen management experience
- Valid Food Handler’s card
- Alcohol service permit if required by local law
- Proficiency in MS Office applications
- Ability to manage and schedule a diverse staff
- Certification in nationally recognized sanitation program or ability to obtain
- Ability to work a flexible schedule including evenings, weekends and holidays
- Strong leadership and interpersonal skills
- Ability to maintain professional appearance and presentation
- Capacity to meet budget goals and control food costs
- Effective communication skills
- Ability to work independently and as part of a team
Job Qualifications
- Minimum of 2-3 years kitchen management experience in full-service restaurant or events venue
- Demonstrated track record of meeting projected costs
- Professional appearance and presentation
- Knowledge of computer software including MS Word, Excel and Outlook
- Current Food Handler's card and alcohol service permit if required
- Working knowledge of employee scheduling in hospitality
- Ability to obtain sanitation certification
- Technical proficiency in food preparation methods
- Effective communication and active listening skills
- Ability to train, evaluate and motivate staff
- Ability to solve problems creatively
- Strong decision making and prioritization skills
- Detail-oriented and able to multitask
- Self-directed and team-oriented
- Ability to work flexible schedules including nights and weekends
Job Duties
- Manage, develop and mentor staff including hiring, firing and disciplining
- Ensure event staff understand workplace expectations and provide ongoing training and mentoring
- Achieve budgeted food percentages through control measures such as portion control, inventory rotation, purchasing procedures and waste control
- Control labor costs by scheduling, cross-training and monitoring breaks
- Ensure purchasing and preparation meet quality and consistency standards
- Develop menus maintaining quality and style
- Monitor food production for recipe specs, portion control and timing
- Supervise line set-up, prep and breakdown
- Coordinate kitchen equipment maintenance
- Manage delivery and setup of catered services
- Arrange staff skills training and orientation
- Provide leadership and build morale
- Maintain positive employee relations
- Staff training, evaluation and counseling
- Promote communication and teamwork among staff
- Ensure compliance with health, safety, sanitation and employment regulations
- Maintain kitchen record keeping including inventories and invoicing
- Organize work schedules and uniform compliance
- Lead by example to ensure quality management of product and service
- Oversee production of staff meals
