Job Requirements
- High school diploma or equivalent
- Minimum 5 years of culinary experience including kitchen management
- Ability to lead and train kitchen staff
- Strong knowledge of food safety and sanitation
- Experience in budget management and cost control
- Excellent organizational and communication skills
- Ability to work in a fast-paced environment
- Must be ServSafe certified or willing to obtain certification
- Proficiency in computer applications including Microsoft Office
- Willingness to participate in client satisfaction activities
- Ability to comply with health and safety regulations
- Must be able to perform essential job functions with or without reasonable accommodation
Job Qualifications
- A.S. degree or equivalent experience
- Minimum 5 years of progressive culinary or kitchen management experience
- Extensive catering experience preferred
- Experience in high volume and complex foodservice operations
- Knowledge of institutional and batch cooking
- Hands-on chef experience required
- Comprehensive knowledge of food and catering trends including quality, production, sanitation, cost control, and presentation
- Proficiency with Microsoft Office Suite, Outlook, email, and Internet
- Experience with client satisfaction programs
- ServSafe certification highly desirable
Job Duties
- Lead daily culinary production including meal preparation, food quality, presentation, and sanitation compliance
- Determine food presentation and create decorative displays
- Provide direction on menu development and create seasonal specials
- Source fresh ingredients and monitor their quality
- Conduct food inspections to maintain consistency
- Research customer preferences and incorporate local flavors into the menu
- Prepare and cook various foods regularly and for special events
- Demonstrate new cooking techniques and equipment usage to staff
- Supervise and coordinate cooks and kitchen staff
- Ensure compliance with health, safety, and sanitation standards
- Set performance standards and monitor employee performance
- Communicate and enforce safety procedures
- Monitor quality of raw and cooked products
- Enforce food safety guidelines
- Manage purchasing, receiving, and food storage standards
- Participate in developing and implementing business strategies
- Manage controllable expenses including food cost and supplies
- Implement purchasing and receiving controls
- Analyze financial and operational information to adjust plans and costs
- Develop and manage department budgets
- Identify revenue and expense opportunities
- Control food cost, labor, and expenses and monitor budget variance
- Oversee food inventory and purchasing
- Schedule staff based on volume forecasts
- Train team members and provide resources to maximize engagement
- Maintain professional attitude and appearance
- Improve service by coaching and guiding employees
- Ensure genuine hospitality and teamwork
- Use resident feedback to improve services
- Handle guest complaints
- Lead team meetings
- Establish goals and solicit employee feedback
