The Executive Chef position within Compass Group in Green Bay, Wisconsin offers an exciting opportunity for experienced culinary professionals seeking to advance their careers. This role focuses on overseeing all kitchen operations, ensuring that the preparation of meals aligns with corporate programs and standards. The Executive Chef will lead and mentor kitchen staff, driving excellence in food quality, safety, and presentation. The position involves planning menus, managing inventories, maintaining compliance with health and sanitation regulations, and upholding the highest standards in foodservice operation.

Job Requirements

  • Education level of associate degree or equivalent experience
  • Minimum of three years progressive culinary or kitchen management experience
  • Strong knowledge of food safety and sanitation regulations
  • Ability to plan menus and control food costs
  • Computer proficiency including Microsoft Office and email
  • Experience in high volume food service operations preferred
  • ServSafe certification preferred

Job Qualifications

  • A.S. or equivalent experience
  • Three plus years of progressive culinary/kitchen management experience
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Experienced with computers, including Microsoft Office (Word, Excel and PowerPoint), Outlook, E-mail and the Internet
  • High volume, complex foodservice operations experience - highly desirable
  • ServSafe certified - highly desirable

Job Duties

  • Plan regular and modified menus according to established guidelines
  • Train kitchen staff in food preparation, safe handling, and operation of equipment, food safety and sanitation based on company and regulatory standards
  • Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
  • Maintain inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
  • Comply with federal, state and local health and sanitation regulations and department sanitation procedures
  • Perform other duties as assigned
