Job Duties

  • Train and manage kitchen personnel
  • supervise culinary activities for the business unit
  • estimate food consumption and identify food quantities needed
  • select and develop new recipes
  • develop menu plans and prices
  • standardize production of recipes to ensure consistent quality
  • establish and standardize presentation and quality techniques
  • oversee equipment operation and maintenance
  • maintain proper safety and sanitation requirements
  • manage special catering events
  • provide culinary instruction
  • manage and maintain departmental costs against budget
  • estimate annual department costs
  • manage performance, discipline, hiring, and firing of personnel
