The Executive Chef role at Colcord Hotel is a key leadership position vital to maintaining the hotel's culinary reputation and elevating its dining experiences. The Executive Chef is responsible for the creation, review, and approval of all recipe files, ensuring that culinary offerings are consistently high quality, creatively prepared, well presented, flavorful, and cost-effective. This position involves close collaboration with culinary staff to continuously enhance the cuisine offered at the property. The Executive Chef manages food orders, including special items from a central commissary, conducts frequent quality checks on finished products, and enforces stringent culinary standards for food, beverages, and garnishes. Operational oversight includes maintaining the overall cleanliness, appearance, and safety of the kitchen. The Executive Chef also ensures that all kitchen equipment complies with City/County Health Department regulations and company standards and promptly troubleshoots any kitchen-related issues.
This dynamic role oversees the planning and execution of all menus and special event catering, including pricing, portion control, and adherence to food and cost control guidelines. The Executive Chef develops creative seasonal specials and conducts product taste panels with Food & Beverage Management to introduce innovative menu items. Participation in culinary events and competitions is encouraged to showcase the hotel's culinary excellence. This leadership position involves managing food costs to meet budget goals by establishing purchasing specifications, product storage and usage protocols, and waste control procedures. The Executive Chef reviews food cost reports with key kitchen and food & beverage teams, manages invoice coding and price updates, and oversees kitchen payroll aligned with business forecasts and budgets. As a manager, the Executive Chef hires and trains kitchen associates, adjusts staffing as needed, reviews schedules to align with forecasts and budgets, and fosters a motivated, high-performing culinary team. This role demands exceptional leadership skills to create a positive work environment, provide effective counseling, delegate responsibilities strategically, and maintain loyalty and collaboration within the broader management team. Job Requirements
- Ability to work standing for long periods
- Ability to perform reaching, stooping and crouching repeatedly
- Dexterity in hands and fingers for food preparation
- Adequate visual abilities for food quality and safety
- Sense of smell and taste for food quality
- Must wear closed toe, non-canvas, non-skid shoes
- High school diploma or equivalent
- Minimum 5 years high-volume cooking experience
- Minimum 3 years as Executive Chef
- Ability to lead and manage culinary teams
- Compliance with company grooming standards
- Ability to participate in culinary competitions
- Knowledge of city and county health department regulations
