The Executive Chef position in Tucson, AZ, is a critical leadership role within Compass Group USA. Reporting directly to a Resident District Manager, this role focuses on steering the culinary operations with precision, passion, and innovation to ensure top-tier food quality, consistent presentation, and exceptional dining experiences across the account. The Executive Chef leads by example, mentoring and developing a talented culinary team via hands-on coaching and training, fostering creativity, while maintaining strict adherence to safety and sanitation standards. This role requires a dynamic culinary leader who excels in menu planning and recipe development, consistently delivering innovative and high-quality meals that exceed client and guest expectations.
The Executive Chef will oversee all culinary production, ensuring standardized recipes, portion control, and presentation guidelines are followed rigorously. They are responsible for maintaining inventory controls, minimizing waste through effective management of leftover food products, and ensuring kitchen operations comply with all federal, state, and local health and sanitation regulations. The position also involves establishing and maintaining cleaning and maintenance schedules for all kitchen equipment and work areas, training kitchen staff in safe food handling, and participating actively in departmental meetings and staff development programs.

Job Requirements
- a.s. or equivalent experience
- 5+ years of progressive culinary/kitchen management experience
- extensive catering experience
- experience with high volume, complex foodservice operations
- institutional and batch cooking experience
- hands-on chef experience
- knowledge of food and catering trends
- computer proficiency including Microsoft Office, Outlook and internet
- willingness to participate in client satisfaction activities
- ServSafe certification
Job Qualifications

Job Duties
- plan regular and modified menus according to established guidelines
- follow standardized recipes, portioning and presentation standards
- complete and utilize daily production worksheets and waste log sheets
- taste completed meals to ensure quality
- train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
- maintain inventory of food and non-food supplies
- make decisions regarding utilization of leftover food products
- comply with federal, state and local health and sanitation regulations
- follow facility, department and company safety policies and procedures
- participate and attend departmental meetings and staff development programs
