Job Requirements

  • bachelor's degree or equivalent experience
  • minimum 3 years management experience
  • minimum 3 years functional experience in food or culinary services
  • ability to lead and train a team
  • excellent communication skills
  • strong organizational skills
  • proficiency with computer systems for inventory and menu management
  • ServSafe certification
  • knowledge of HACCP and health and safety protocols

Job Qualifications

  • bachelor's degree or equivalent experience
  • minimum 3 years management experience
  • minimum 3 years functional experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, or mall food courts
  • strong culinary background with ability to stay current with culinary trends
  • excellent leadership and communication skills
  • strong management skills with experience in high-volume facilities
  • experience in high-end catering and dining
  • strong production culinary background ideally in upscale restaurant, retail or catering environment
  • experience leading and engaging culinary teams
  • menu planning experience
  • proven ability to communicate effectively and develop strong customer relationships
  • ability to multitask in a high standards driven environment
  • understanding of forecasting, food cost management, purchasing, inventory and labor management concepts
  • ability to lead, develop and train teams
  • creative problem solving and project management skills
  • proficient computer skills and exceptional organizational and customer service skills
  • ServSafe certified with knowledge of HACCP
  • Certified Executive Chef (CEC) a plus

Job Duties

  • implement and standardize all culinary systems and procedures for hospital including catering, retail menus, LTO's, garnishing, plating charts, production, puree standardization, inventory control, HACCP, cleaning schedules, staffing plans, presentation and quality of food, kitchen cleanliness, safety, using Sodexo standards as benchmark
  • monitor, audit, implement and standardize new menus using Food Management System (FMS)
  • be responsible for food and physical safety and annual training for all hourly associates
  • conduct Gold Check audits, create action plans based on audit findings and maintain GC audit books
  • collaborate with vendors on procurement items and oversee purchasing manager and purchasing financial audits
  • continue sustainability program with direction from Director of Culinary Operations
  • improve and standardize catering and banquet services, create menus based on client needs
  • implement innovative and fresh ideas in retail, catering, and patient services
  • create interpersonal relationships with clients within the hospital
