Sodexo is currently seeking an Executive Chef to lead culinary operations at the Daughters of Israel, a skilled care and rehabilitation facility located in West Orange, New Jersey. This facility is dedicated to providing kosher dining services to approximately 100 residents while also supporting a meals on wheels program, demonstrating Sodexo’s commitment to community health and nutrition. The Executive Chef role is critical in ensuring the highest standards of food quality, safety, and service are maintained, aligning with Sodexo’s corporate standards and the specific needs of the facility.

This position involves managing a culinary team of about six members, overseeing all aspects of food production, quality assurance, and compliance with safety regulations. The typical working hours are from 7:00 am to 3:30 pm, with occasional weekend and holiday shifts, underscoring the importance of flexibility and leadership presence in this role. The Executive Chef will be responsible for implementing and standardizing culinary procedures, including catering services, menu development, inventory control, and auditing practices such as HACCP and Gold Check audits.

An essential part of this role is building strong, visible relationships with residents and staff, ensuring that feedback is heard and incorporated into service improvements. The Executive Chef will also play a significant role in training and mentoring the culinary team, emphasizing safety, sanitation, and quality. Additionally, procurement responsibilities require collaborating with vendors and managing purchasing processes and financial audits.

Job Requirements

  • Associate's degree or equivalent experience
  • Minimum 2 years management experience
  • Minimum 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts
  • Strong culinary background
  • Strong knowledge of safety and sanitation
  • Knowledge of special diets is helpful
  • Experience training and mentoring a culinary team with exceptional human resource and supervisory skillset
  • Experience managing food costs and strong computer skills
  • Enthusiasm for working with a diverse set of people and are confident and warm
  • Positive approach to tasks with a can-do attitude and impeccable attention to detail

Job Duties

  • Oversee daily kitchen operations
  • Implement and standardize all culinary systems and procedures for residents including catering, mindful garnishing, panning charts, production, puree standardization, FMS sheets, inventory control, HACCP, cleaning schedules, staffing plans, presentation and quality of food, kitchen cleanliness, safety
  • Build strong relationships by being visible, approachable, and responsive to resident feedback
  • Monitor FMS including audits, implementation and standardization for new menus
  • Responsible for food and physical safety and annual training for all hourly associates
  • Conduct Gold Check audits, create action plans based on audit findings, maintain and update GC audit books
  • Work with vendors on procurement items and responsible for purchasing manager and purchasing financial audits
