American Cruise Lines is seeking talented and driven Executive Chefs to join its shipboard culinary team for the 2026 cruising season. This full-time, exempt role involves living and working aboard the ship, overseeing all aspects of meal preparation and kitchen operations while cruising across America’s famous waterways. The Executive Chef will take the lead in crafting exceptional dining experiences by planning, preparing, and presenting elevated cuisine inspired by the local flavors of each region visited. This unique position offers an exciting opportunity for culinary professionals passionate about travel, regional ingredients, and guest service excellence.

The Executive Chef will mentor and manage a galley team of 6 to 10 culinary staff in a hands-on and collaborative environment, fostering professionalism and teamwork. Ensuring food safety compliance with FDA regulations and sanitation standards is a crucial part of the role. The Chef will carefully manage food inventory, portions, and waste reduction to uphold operational efficiency aboard the ship. Adaptability and composure under pressure are essential as the dynamic nature of shipboard work requires readiness to handle last-minute changes smoothly.

Job Requirements

  • Ability to live and work onboard a vessel for extended periods of time
  • ability to stand for entire shifts and work around 12 hours per day
  • ability to lift frequently up to 20 lbs and occasionally up to 50 lbs
  • ability to bend, squat, reach frequently
  • ability to work 7 days per week while onboard
  • ability to assist in on-board emergencies by climbing ladders and passing through hatches
  • ability to speak, read, and understand basic cooking recipes and directions
  • ability to multi-task and work calmly under pressure

Job Qualifications

  • 6-8+ years’ experience in full-service resorts, hotels, country clubs, or banquet settings
  • ServSafe Manager certification strongly preferred
  • strong leadership, communication, and training abilities
  • proven knowledge of FDA food safety standards and kitchen best practices
  • ability to manage multiple priorities under pressure
  • a hands-on, collaborative, and detail-oriented approach to kitchen leadership
  • must pass a pre-employment drug test and background check
  • TWIC (Transportation Worker Identification Credential) is required
  • ability to perform the essential functions of the job with or without accommodation
