Job Requirements

  • minimum of 2-4 years of experience as an Executive Chef or 3-5 years as a Chef de Cuisine or Executive Sous Chef in an upscale casual or fine-dining environment
  • culinary expertise in Mediterranean and Italian cuisines
  • ability to recruit, train, and develop a high-performing kitchen team
  • strong knowledge of menu planning and pricing
  • experience managing inventory, food and labor costs
  • thorough understanding of regulatory compliance and health department codes
  • excellent leadership and communication skills

Job Qualifications

Job Duties

  • direct the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables, desserts, or other foods
  • plan and price menus
  • supervise and coordinate activities of cooks and workers engaged in food preparation
  • demonstrate new cooking techniques and equipment to staff
  • order and maintain inventory of food and supplies
  • monitor and control food and labor costs to meet budget requirements
  • inspect supplies, equipment, and work areas to ensure conformance to established standards
  • determine how food should be presented and create decorative food displays
  • maintain food production records, copies of recipes and menu compiles, and food wastage logs
  • ensure all kitchen operations comply with local health department codes
