Job Description
American Cruise Lines is the largest U.S. cruise line dedicated to providing immersive travel experiences, exceptional service, and world-class cuisine while showcasing America's rich heritage on some of the finest ships in the country. With a diverse portfolio of over 50 itineraries that explore America's stunning waterways — ranging from New England, the Southeast, the Mississippi River, the Pacific Northwest, Alaska, the Great Lakes, and beyond — American Cruise Lines offers guests an unparalleled opportunity to discover the natural beauty and cultural landmarks of the United States from a unique vantage point. The company is committed to excellence and prides itself on its values of optimism, commitment, patriotism, and merit, which deeply influence its service and onboard culture.
The role of the Executive Chef aboard American Cruise Lines vessels is a prestigious and dynamic opportunity for culinary professionals who want to lead high-performing teams in a fast-paced, travel-oriented environment. The Executive Chef is responsible for orchestrating the complete culinary experience on board, ensuring that every meal is an unforgettable event for both guests and crew alike. This position demands creativity and technical culinary skill, with a particular emphasis on crafting regionally inspired dishes that use fresh, local ingredients reflecting the flavors of the various regions visited during cruising itineraries. As the culinary leader, the Executive Chef mentors and directs a galley crew typically consisting of 6-10 members, promoting a collaborative, hands-on approach to kitchen leadership.
This leadership role demands a strong ability to manage kitchen operations in compliance with strict FDA, sanitation, and safety standards while overseeing food inventory, portion control, and waste reduction. The Executive Chef must exhibit exceptional organizational and communication skills to handle multiple priorities under pressure, adapt quickly to last-minute changes, and maintain a calm, can-do attitude throughout each voyage. This position offers a unique lifestyle, involving living and working onboard a ship for extended periods and traveling throughout the United States. It requires physical stamina and agility to perform duties safely amid the constant motion of the ship, including lifting substantial weights and managing various emergency situations.
American Cruise Lines offers a competitive daily rate for this full-time, exempt position alongside comprehensive benefits, including health, dental, and vision insurance, a 401(k) plan with company match, and covered expenses such as travel, room and board, uniforms, and training. This role is ideal for experienced chefs who are passionate about culinary excellence, leadership, and providing exceptional guest experiences in an environment that goes beyond the traditional kitchen setting. If you are ambitious, detail-oriented, and dedicated to sharing America’s story through food, this role as Executive Chef on one of America’s finest ships presents a remarkable career opportunity.
