As an Executive Chef with American Cruise Lines, you will take on a pivotal role in shaping the culinary journey that defines the cruise experience. This position is ideal for a talented, passionate chef who thrives in a high-paced, dynamic environment and embraces leadership responsibilities. You will oversee meal preparation for guests and crew, curating menus that reflect the flavors and ingredients native to the regions visited during cruises. Your leadership will extend to managing a dedicated galley team of 6 to 10 members, where mentoring and training are integral to maintaining the company's high standards.

The role demands a culinary leader with deep technical expertise and a genuine passion for delivering memorable dining moments. It requires the ability to adapt swiftly to changes while maintaining calm and professionalism. You will be entrusted with ensuring compliance with FDA sanitation and safety protocols, managing food inventory efficiently, controlling portion sizes, and minimizing waste. Operating within the unique environment of a ship, where constant motion influences daily tasks, calls for adaptability and resilience.

American Cruise Lines operates on a full-time, exempt schedule where the Executive Chef works seven days a week during shipboard periods, typically for 6 to 8 weeks on board followed by 1 to 2 weeks off. The position requires physical stamina to endure long shifts, including standing for prolonged periods, lifting heavy items, and navigating stairs and tight spaces. Job Requirements

  • 6-8+ years’ experience in full-service resorts, hotels, country clubs, or banquet settings
  • ServSafe Manager Certification strongly preferred
  • strong leadership, communication, and training abilities
  • proven knowledge of FDA food safety standards and kitchen best practices
  • ability to manage multiple priorities under pressure
  • a hands-on, collaborative, and detail-oriented approach to kitchen leadership
  • must pass a pre-employment drug test and background check
  • TWIC (Transportation Worker Identification Credential) is required
  • ability to perform the essential functions of the job with or without accommodation
