Job Duties

  • develop and implement operating standards for the culinary department
  • set guidelines for stocking, ordering, and purchasing ingredients minimizing spoilage and waste
  • oversee kitchen and back-of-house operations ensuring food safety and quality
  • establish line check procedures for Department of Health compliance
  • oversee menu structure, offerings, pricing and develop special event dishes
  • promote GHM core values and culture
  • lead service including expediting and plating during service
  • develop customer relationships and address service needs
  • develop and execute sales and profit plans with General Manager
  • manage food and labor cost controls
  • cost and price recipes regularly
  • oversee purchasing programs and vendor relationships
  • maintain accurate inventory and invoicing systems
  • ensure dry aging room functionality
  • maintain financial reporting as directed
  • manage labor costs and staffing coverage
  • oversee daily restaurant administration including payroll and station assignments
  • enforce employee grooming and dress codes
  • provide clear direction and coaching to hourly employees
  • create accountability systems and provide performance feedback
  • ensure compliance with health and safety standards
  • conduct regular team product and service training
  • approve maintenance within budget
  • engage in community and corporate social responsibility activities
  • keep up to date with educational and professional developments
  • hire, train, supervise, and evaluate BOH staff
  • mentor executive sous chefs and sous chefs
  • embody hospitality and service excellence
  • monitor and encourage service standards
  • manage recruitment and training needs
