The Executive Chef role at American Cruise Lines is a unique opportunity for culinary professionals seeking to combine their passion for food with the adventure of travel. As the leader of the shipboard galley, the Executive Chef is entrusted with crafting and delivering an elevated culinary experience that captures the essence of each region visited. This full-time, exempt position requires a dynamic leader capable of managing a galley team of 6 to 10 members in a fast-paced, hands-on kitchen environment while maintaining the highest standards of food safety, quality, and presentation.
In this role, the Executive Chef plans and executes regionally inspired menus using fresh, local ingredients to ensure every meal served is not only delicious but memorable for guests and crew alike. Beyond menu development, the Executive Chef oversees all kitchen operations, including inventory management, portion control, waste reduction, and adherence to FDA and sanitation standards. This role demands the ability to adapt quickly to the changing conditions of a ship’s galley, respond calmly to last-minute adjustments, and inspire the team to perform at their best under pressure.

- 6-8+ years’ experience in full-service resorts, hotels, country clubs, or banquet settings
- ServSafe Manager Certification strongly preferred
- strong leadership, communication, and training abilities
- proven knowledge of FDA food safety standards and kitchen best practices
- ability to manage multiple priorities under pressure
- a hands-on, collaborative, and detail-oriented approach to kitchen leadership
- must pass a pre-employment drug test and background check
- TWIC (Transportation Worker Identification Credential) is required
- ability to perform the essential functions of the job with or without accommodation
