Job Description

American Cruise Lines is the largest U.S. cruise line, renowned for delivering immersive travel experiences, exceptional service, and world-class cuisine aboard the finest American ships. The company operates over 50 itineraries throughout America’s most breathtaking waterways, including regions like New England, the Southeast, the Mississippi River, the Pacific Northwest, Alaska, and the Great Lakes. Dedicated to sharing America’s unique story through travel, American Cruise Lines offers guests a chance to explore the country in comfort and style while enjoying unparalleled culinary experiences.

As an Executive Chef aboard American Cruise Lines vessels, you will hold a pivotal role in crafting outstanding gastronomic experiences that elevate every voyage. The position is designed for talented culinary professionals ready to lead a dynamic galley team, curate regionally inspired menus featuring fresh, locally sourced ingredients, and deliver unforgettable dining encounters for guests. This role goes beyond traditional kitchen leadership - it requires a passion for innovation, a commitment to quality, and the ability to thrive under the unique conditions presented by life at sea.

The Executive Chef will manage all aspects of meal preparation for both guests and crew, ensuring that every dish served aligns with American Cruise Lines’ high standards of taste, presentation, and safety. You will take on a leadership role, coaching and mentoring a galley team of 6-10 members in a fast-paced, hands-on environment. Your responsibilities will extend to overseeing kitchen operations to comply fully with FDA regulations, sanitation protocols, and safety standards. Inventory management, portion control, and waste reduction are also critical components of the role, requiring a keen eye for detail and efficient resource management.

This position requires a candidate who can adapt quickly to changes while maintaining a calm demeanor and a can-do attitude. Being able to multi-task and lead a team effectively under pressure is essential. Beyond culinary skills, the Executive Chef must exhibit strong leadership, communication, and training abilities, empowering their team to deliver exceptional service day after day.

Working on board American Cruise Lines ships during the 2026 cruising season, this full-time, exempt position demands a strong commitment to a unique and rewarding maritime lifestyle. Candidates must be able to live and work on the ship for extended periods, coping with the physical demands of ship motion and the constraints of living on board. The Executive Chef will work seven days a week while on board, typically for 6 to 8 weeks before having 1 to 2 weeks off. This intense schedule requires resilience, physical stamina, and the ability to work around 12 hours per day.

American Cruise Lines prides itself on values centered around optimism, commitment, patriotism, and merit, cultivating a workplace culture that respects and supports its employees while striving for excellence. The company offers competitive compensation complemented by health, dental, vision benefits, and a 401(k) plan with employer match. Travel, room and board, uniforms, and training expenses are covered, underscoring the company’s commitment to its people. As an equal opportunity employer, American Cruise Lines fosters a diverse and inclusive environment where all team members can thrive.

In summary, the Executive Chef role at American Cruise Lines is ideal for experienced culinary leaders looking for an extraordinary opportunity to combine their passion for cooking, leadership, and travel. It is a unique chance to command a professional shipboard kitchen, connect with diverse guests across the United States, and craft dishes inspired by the rich regional flavors encountered on the voyage. If you are a driven culinary professional eager to take on the challenge of leading a high-performing team in a maritime setting, this career opportunity promises both professional growth and adventure.
