Job Description

American Cruise Lines is the largest U.S. cruise line dedicated to offering immersive travel experiences along America's most scenic waterways. With a fleet known for its elegance and comfort, the company operates over 50 itineraries spanning iconic locations such as New England, the Southeast, the Mississippi River, the Pacific Northwest, Alaska, and the Great Lakes. As a leader in the cruise industry, American Cruise Lines prioritizes exceptional service and world-class cuisine, striving to share America’s unique stories and landscapes through memorable journeys on the finest American ships.

This Executive Chef position is an exciting opportunity for culinary professionals who are passionate about creating elevated, regionally inspired dishes that reflect the diverse flavors of the destinations visited. The Executive Chef will lead a shipboard culinary team, providing expert mentorship and guidance while managing all aspects of meal preparation for both guests and crew. This role demands a strong leader with technical expertise, creativity, and a commitment to excellence in food safety and kitchen operations. As part of the team, the Executive Chef will embrace American Cruise Lines’ core values of optimism, commitment, patriotism, and merit, contributing to a culture focused on delivering an unforgettable dining experience.

The job involves overseeing a dynamic galley environment where every meal is crafted with fresh, local ingredients to ensure top quality and authenticity. The Executive Chef will manage food inventory and portion control to reduce waste while adapting quickly to the fast-paced and ever-changing onboard environment. This role requires the ability to work effectively in the unique setting of a ship that constantly encounters natural forces such as wind, waves, and currents, demanding physical stamina and agility.

Applicants should be prepared to live and work onboard for extended periods, with work schedules including seven days a week when on the ship and rotations of six to eight weeks onboard followed by one to two weeks off. The position is full-time and exempt, offering a competitive daily rate, comprehensive health benefits including dental and vision, and a 401(k) plan with company matching. Additional expenses such as travel, room and board, uniforms, and training are provided by American Cruise Lines. Embracing the opportunity to lead a dedicated galley team in a breathtaking setting, the Executive Chef will play a vital role in enhancing the guest experience and contributing to the company’s storytelling mission through exceptional cuisine.
