We are actively seeking an Executive Chef to lead and manage kitchen operations in accordance with our established standards for guest satisfaction, food quality, and sustainability. This full-time role is pivotal in ensuring that our culinary offerings meet and exceed guests' expectations while maintaining high operational efficiency and safety standards. The Executive Chef will work closely with various departments, including purchasing, catering, and stewarding, to ensure seamless kitchen functionality and uphold the quality of all food products served across our establishments.
In this role, you will be responsible for leading a team of culinary professionals by interviewing, selecting, training, scheduling, coaching, and supporting kitchen associates to perform in alignment with HHM Hotels' brand and service standards. You will set priorities for production and preparation tasks, oversee inventory management, requisition supplies, and ensure proper storage and quality control of all items. Collaborating with the Executive Steward to review equipment needs and sanitation schedules will be part of your duties, guaranteeing that all kitchen environments operate safely and efficiently.
A key aspect of the Executive Chef position includes menu development, testing, and recipe formulation, with a focus on maintaining consistency and excellence in food presentation and preparation. You will monitor guest reactions and collaborate with the service team to enhance guest satisfaction continually. Frequent kitchen walk-throughs will enable you to direct personnel on best practices and address any operational deficiencies promptly.
Additionally, you will play a supportive role in catering by developing special menus for events and meeting clients as needed. Budgeting responsibilities include reviewing sales and food costs daily, maximizing the use of excess items to minimize waste, and preparing weekly staffing schedules in line with labor cost guidelines and forecasting.
The role requires adherence to HHM Hotels' EarthView sustainability program, promoting environmentally-conscious practices within the kitchen. Safety is paramount, with expectations to follow all MSDS and OSHA standards, practice safe work habits, and wear appropriate protective equipment.

Job Requirements
- Degree or certificate in Culinary Arts
- One to two years’ experience as an Executive Chef
- Ability to work varied schedule including holidays and weekends
- Ability to stand for extended periods, walk, push, lift up to 50 pounds, bend, reach, stoop, kneel or crouch
- Knowledge of MSDS and OSHA standards
- Strong organizational skills
- Commitment to sustainability practices
Job Qualifications
- Degree or certificate in Culinary Arts
- One to two years’ experience as an Executive Chef
- Expertise in food product, presentation, quality and preparation
- Knowledge of menu concept and design
- Strong leadership and team management skills
- Ability to develop and test new recipes
- Excellent communication and interpersonal skills
- Ability to manage budgets and control food cost
Job Duties
- Interview, select, train, schedule, coach and support associates ensuring they perform in accordance with established brand or hotel standards and consistent with HHM core values
- Establish priorities and assign production and preparation tasks to staff to execute
- Review daily menu specials, banquet event orders and inventory food items for daily use
- Requisition day’s supplies and ensure they are received and stored correctly, communicate needs with purchasing and storeroom personnel
- Ensure quality of products received
- Meet with the Executive Steward to review equipment needs, banquet plate-up assistance, cleaning schedule/project status, and health/safety and sanitation follow-up
- Ensure each kitchen work area is stocked with specified tools, supplies, equipment and that recipe cards, production schedules, plating guides and photography are posted and current
- Ensure staff prepares menu items following recipes and yield guides, in accordance with department standards, develop new menu items, test and write recipes
- Observe guest reactions and confer with service staff to ensure guest satisfaction
- Conduct frequent walk-throughs of each kitchen area and direct respective personnel to correct any deficiencies
- Assist catering department with developing special menus for functions, meet with clients as requested
- Review sales and food cost daily and ensure that excess items are utilized efficiently
- Prepare weekly work schedules for all kitchen personnel in accordance with staffing guidelines and forecasted labor costs
- Follow sustainability guidelines and practices related to HHM’s EarthView program
- Practice safe work habits, wear protective safety equipment and follow MSDS and OSHA standards
- Perform other duties as requested by management
