Job Description

This role is integral to the culinary department within White Lodging's Food and Beverage operations. The position involves overseeing all culinary activities while ensuring adherence to financial forecasts and budgetary goals. The culinary leader will manage recipe development, food preparation, and marketing efforts, ensuring the profitability and operational success of the kitchen and food service areas. Compliance with health department regulations and corporate food safety standards is paramount in this role. The candidate will be responsible for creating menus, executing menu implementation strategies, and building effective kitchen teams by establishing clear station assignments in line with company Standard Operating Procedures (SOPs).

The ideal candidate will take on the role of a Subject Matter Expert in food handling, preparation, and presentation, leveraging their extensive culinary knowledge to nurture and lead the culinary team. This position demands a combination of strong leadership, strategic planning, and problem-solving skills to effectively manage the complex dynamics of food service operations. Exceptional communication skills are required to guide the team, foster collaboration, and ensure high levels of service and cleanliness.

Job Requirements

  • Bachelor's degree in Culinary Arts, Hospitality Management, or related field preferred
  • Minimum of 5 years experience in culinary management or leadership roles
  • Proven track record in financial management within a culinary environment
  • Comprehensive knowledge of local health department regulations and food safety standards
  • Ability to create and manage menus with a focus on profitability and guest satisfaction
  • Strong leadership and team-building capabilities
  • Effective communication and interpersonal skills
  • Capacity to work under pressure and manage stress in high-demand environments
  • Commitment to uphold company SOPs and guidelines

Job Duties

  • Meet financial forecasts and budget goals for all culinary operations
  • Oversee ordering, preparing, marketing, and execution of all recipes
  • Manage all costs associated with the profitability of the Food and Beverage Department
  • Ensure compliance with all current local health department regulations, Corporate HACCP and Food Safety SOPs, and Federal Guidelines
  • Create all menus, recipes, and menu implementation execution lists and timelines
  • Build kitchen brigades and station assignments following White Lodging SOPs and directives
  • Act as a Subject Matter Expert regarding food handling, preparation, and presentation for the culinary team
