The Executive Chef role at Legends and ASM Global is a vital leadership position within the Food and Beverage department, reporting directly to the Director of Food and Beverage and the Regional Director of Food and Beverage. This salaried exempt position demands a seasoned culinary professional with a passion for innovation, quality, and operational excellence in high-volume, fast-paced environments. The Executive Chef will be responsible for developing innovative menu items aligned with industry trends, utilizing local and seasonal ingredients to enhance catering and concession offerings. Maintaining strict recipe compliance and quality control throughout the production process is essential to ensure an exceptional dining experience for guests. A key responsibility of the Executive Chef is to uphold health department scores of 90 or higher alongside third-party audit scores of 95 or above, emphasizing the importance of meeting rigorous safety and sanitation standards. The role includes comprehensive management of the culinary production schedule to align with fluctuating business needs, alongside diligent oversight of departmental budgets with a focus on maximizing labor efficiency and cost control. Maintaining robust relationships within the local hospitality community and professional associations reflects the position's commitment to industry involvement and continuous learning. The Executive Chef must also ensure kitchen equipment is kept in optimal condition through regular cleaning and scheduled maintenance alongside the Director of Food and Beverage and Facility Maintenance teams. Effectively managing culinary and stewarding personnel is critical for meeting labor and production targets, while the hiring and training of team members ensures compliance with health department regulations, including Serv Safe certification. This role requires exceptional organizational, communication, and leadership skills to foster a motivated culinary team and deliver outstanding service across all events, including banquets and large-scale functions. The Executive Chef will also oversee inventory management to prevent shortages and minimize waste, prepare proposals and tastings for potential clients, and create visually appealing, creative menus that maintain quality across catering and concession operations. This leadership position demands a proactive, customer-focused leader ready to embrace the challenges and opportunities within the vibrant environment of Legends and ASM Global's live event venues. The salary range for this role is between $90,000 and $100,000 annually, commensurate with experience, and includes a generous benefits package. The position is based onsite in Rochester, MN, and requires flexibility to work irregular hours, including nights, weekends, and holidays, as dictated by event schedules.

Job Requirements

  • Must have a high school diploma or GED
  • Minimum of 8 years of culinary experience in high volume facility producing meals for large events
  • Must maintain local health codes and sanitation HACCP
  • Ability to work irregular hours as dictated by the event schedule, including nights, weekends, and holidays
  • Serv Safe certified/Food Handlers Certificate

Job Qualifications

Job Duties

  • Research and develop menu items to keep pace with industry trends, local and seasonal ingredients to support catering and concession business
  • Ensure recipe compliance and quality control are met throughout the production process
  • Maintain health department score of 90 or above and Legends | ASM's 3rd party audit score of 95 or above
  • Create the culinary production schedule to meet business demands
  • Manage department budget to meet and exceed labor and cost of good expenditures
