Job Requirements

  • At least 10 years of experience in the culinary industry
  • Proven experience in leadership roles within culinary operations
  • Ability to travel frequently to various job sites
  • Strong knowledge of food safety and quality assurance protocols
  • Effective interpersonal and communication skills
  • Capability to conduct training and oversee menu execution
  • Commitment to staying current with culinary trends and ingredient sourcing

Job Duties

  • Travel for site visits to ensure continuity and cultural adherence
  • Focus on menu and kitchen execution standards
  • Interview potential Project Managers and Chefs/Executive Chefs
  • Create menus and recipes tailored for each event
  • Build a resource library featuring diverse price tiers, cultures, and applications
  • Continuously develop menus in response to commodity changes and culinary trends
  • Stay educated on current trends and ingredient sourcing
  • Oversee menu execution for daily operations and special events
  • Participate in conference and weekly director calls addressing menu concerns
  • Represent the culinary division as the face and taste of Cotton Culinary
  • Collaborate in marketing event menu planning and execution guidelines
  • Monitor menu operations including QA, HACCP, HSE, food preparation, and recipe adherence
  • Conduct menu training for all food-handling employees
