Job Requirements
- 5+ years of kitchen management or executive chef experience
- Current ServSafe certification
- Experience in high-volume retail, entertainment, hospitality or restaurant venues
- Ability to manage and develop teams
- Willingness to comply with Department of Health regulations
- Capacity to work in a fast-paced, high-volume environment
- Ability to walk, bend, stand for periods of time
- Ability to lift objects with some assistance
Job Qualifications
- 5+ years of kitchen management or executive chef experience
- Bachelor's or culinary degree preferred
- Experience in high-volume retail, entertainment, hospitality, or restaurant venues
- Extensive banquet event experience
- Experience managing and developing teams
- Current ServSafe certification
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- Adhere to the company's mandated F&B menu and purchasing programs
- Maintain budgeted revenue, cost of sales, labor, supplies, and operate cash flow relating to food operations
- Review monthly profit and loss statements and make necessary adjustments
- Plan, supervise, and execute food and beverage service for all events including cleanup
- Assist with cooking when needed
- Estimate food consumption and make purchases as appropriate
- Schedule staff efficiently to accommodate business volume shifts
- Recruit, hire, train, and retain kitchen staff
- Develop key staff including sous chefs and lead cooks
- Ensure product quality, freshness, and presentation meet company standards
- Supervise preparation, portioning, garnishing, and storage of food
- Manage kitchen equipment maintenance and sanitation audits
- Ensure compliance with Department of Health regulations
- Report critical issues to General Manager
