Job Requirements
- Post-high school education preferred
- Minimum five years of related employment experience
- Culinary education desirable
- Experience in hotel kitchen or food service operations preferred
- Demonstrated leadership and team management skills
- Strong knowledge of food safety and sanitation standards
- Ability to manage budgets and control costs
- Excellent communication skills
- Ability to work under pressure and meet deadlines
- Regular attendance and availability for work
Job Qualifications
- Two plus years of post-high school education, culinary education is desirable
- Five plus years in a related position
- Hotel experience preferred
- Advanced knowledge of food profession principles and practices including management of people and complex problems
- Knowledge of hotel operations including marketing, security and safety programs, personnel and labor relations, business plans, repairs and maintenance, budget forecasting, quality assurance, hospitality law, and long-range planning
- Leadership skills to motivate and develop staff and ensure goal accomplishment
- Ability to work effectively under time constraints and deadlines
- Effective verbal and written communication skills with ability to adapt communication style for different audiences
Job Duties
- Direct the day-to-day operations of all areas of the kitchen including outlets, banquets, stewarding, and purchasing
- Manage human resources in the kitchen to attract, retain and motivate staff including interviewing, hiring, training, coaching, conducting performance and salary reviews, resolving problems, and disciplining or terminating employees as needed
- Plan and manage the procurement, production, preparation, and presentation of all food in a safe, sanitary, and cost-effective manner
- Monitor and control maintenance and sanitation of kitchen, equipment, and related areas to ensure a healthy, safe work environment that meets or exceeds all standards and regulations
- Develop, implement and manage the department's budget while analyzing, forecasting, monitoring, and controlling labor and food costs to meet or exceed budget objectives
- Develop and implement menus and backup systems within corporate guidelines to improve revenues and profit margins while maintaining food quality
- Execute and promote the Accident Prevention Program to minimize liabilities and related expenses
- Comply with attendance rules and be available to work regularly
- Perform other job-related duties as assigned
