Job Requirements
- High school diploma or equivalent
- 3 to 5 years of culinary management experience depending on formal degree or training
- hands-on chef experience
- ServSafe certification
- experience with computer applications including Microsoft Office Suite, Outlook, and internet
- ability to work full time, primarily Monday through Friday with rotating holidays and occasional weekends
- ability to follow federal, state and local health and safety regulations
- ability to maintain sanitary and safe work environment
- effective communication skills
- ability to train and lead a team of kitchen staff
Job Qualifications
- 3 to 5 years of culinary management experience depending upon formal degree or training
- extensive catering experience a plus
- experience in high volume, complex foodservice operations
- experience with institutional and batch cooking
- hands-on chef experience
- extensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- proficiency with computers including Microsoft Office (Word, Excel, PowerPoint), Outlook, email and internet
- ServSafe certification
Job Duties
- Plans regular and modified menus according to established guidelines
- follows standardized recipes, portioning and presentation standards
- completes and uses daily production worksheets and waste log sheets
- tastes completed meals to ensure quality
- trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
- maintains inventory within established guidelines to ensure product availability
- makes decisions regarding utilization of leftover food products within company guidelines
- follows federal, state and local health and sanitation regulations
- follows facility, department, and company safety policies
- participates and attends departmental meetings and staff development programs
