Job Requirements

  • minimum of five years' executive chef culinary management experience at an upscale, full-service restaurant

Job Duties

  • maintains food quality standards for the restaurant
  • oversees all phases of food procurement, production, and service including inventory and ordering, storage and rotation, food preparation, recipe adherence, plate presentation, and service and production time standards
  • provides immediate feedback to staff on food quality, execution, and presentation
  • strictly follows recipes and procedures per Jolt
  • ensures target ticket times are consistently achieved while maintaining quality standards
  • responsible for maintaining kitchen equipment and storage areas in a clean condition
  • conducts monthly housekeeping, food safety, sanitation, and facility reviews
  • ensures kitchen cleanliness and passes health department audits
  • completes culinary line checks and sanitation checks daily
  • trains, develops, and motivates team members and leaders
  • communicates with leaders, hourly team members, and guests providing positive feedback
  • ensures adherence to food safety, sanitation, and storage practices
  • assists General Manager in meeting sales and profitability goals
  • maintains safe working conditions per OSHA and regulatory requirements
  • performs duties of all kitchen positions proficiently and trains team members accordingly
  • counsels, coaches, and evaluates staff regularly
  • executes and trains use of the Daily Shift Card
  • takes responsible action in solving problems and disciplinary issues
