Job Requirements
- Minimum 7-10 years of culinary leadership experience
- culinary degree or equivalent
- ServSafe certification
- knowledge of food safety and sanitation regulations
- excellent communication skills
- ability to train and mentor staff
- capacity to manage inventory and control costs
Job Qualifications
- Minimum 7-10 years of progressive culinary leadership experience in upscale hotels or conference centers
- culinary degree or equivalent required
- certified in ServSafe
- additional food safety certifications preferred
- demonstrated experience in menu planning, production execution and cost control
- proven track record of successful team leadership and development
- strong interpersonal and communication skills
Job Duties
- Plan regular and modified menus according to established guidelines
- follow standardized recipes, portioning and presentation standards
- complete and utilize daily production worksheets and waste log sheets
- taste completed meals to ensure quality
- train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
- maintain inventory of food and non-food supplies within established guidelines
- make decisions regarding utilization of leftover food products within company guidelines
- comply with federal, state and local health and sanitation regulations
- follow facility, department and company safety policies and procedures
- participate in departmental meetings, staff development and professional programs
