Job Requirements

  • Minimum 5 years of culinary leadership or management experience
  • degree or certification in Culinary Arts preferred
  • proven track record of kitchen leadership and staff development
  • knowledge of various cuisines, plating techniques, and culinary trends
  • excellent organizational, financial, and communication skills
  • certification in food safety such as CA Food Handler, ServSafe Food Manager, Allergen and Alcohol Certification required
  • minimum 5 years hotel experience

Job Qualifications

  • Minimum 5 years of culinary leadership or management experience in an upscale or full-service hotel, resort, or high-volume restaurant
  • degree or certification in Culinary Arts preferred
  • proven track record of effective kitchen leadership and staff development
  • in-depth knowledge of various cuisines, plating techniques, and modern culinary trends
  • excellent organizational, financial, and communication skills
  • CA Food Handler, ServSafe Food Manager, Allergen and Alcohol Certification or equivalent food safety certification
  • minimum 5 years hotel experience

Job Duties

  • Oversee all kitchen operations including restaurants, banquets, in-room dining, and special events
  • check personal hygiene of staff daily
  • set up weekly work and production schedules
  • lead, train, and mentor kitchen team including sous chefs, line cooks, and stewards
  • check food needs and proper usage as per recipes
  • check banquet guarantees for accuracy and proper food production
  • write 90 day and annual employee reviews
  • document employee training
  • conduct standup meetings daily
  • manage long- and short-term kitchen planning and operations
  • develop restaurant and banquet menus reflecting food trends
  • ensure food quality, presentation, and sanitation standards
  • order and manage inventory using BirchStreet system
  • manage food and labor costs within budget
  • maintain high employee morale and team environment
  • review payroll and control labor costs
  • maintain compliance with health, safety, and sanitation regulations
  • inspect freezers and refrigerators for cleanliness and correct temperature
  • inspect food products for proper rotation and waste avoidance
  • ensure staff food safety training is up to date
  • produce and present all restaurant menus and room service
  • collaborate on event planning, tastings, and promotions
  • conduct regular inventory, ordering, and vendor management
  • handle staffing including hiring, performance evaluations, and scheduling
  • execute and promote hotel Safety Prevention Program to reduce liabilities
