Job Requirements

  • High school diploma or equivalent
  • 3 to 5 years of culinary management experience depending upon formal degree or training
  • ServSafe certified
  • Strong leadership and communication skills
  • Ability to maintain a safe and sanitary kitchen environment
  • Experience with inventory management
  • Proficiency with computer applications including Microsoft Office
  • Flexibility to work rotating holidays and occasional weekends
  • Ability to lead and train a team of culinary staff

Job Qualifications

  • 3 to 5 years of culinary management experience depending upon formal degree or training
  • Extensive catering experience is a plus
  • Experience in high volume, complex foodservice operations
  • Knowledge of institutional and batch cooking
  • Hands-on chef experience required
  • Extensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls and presentation
  • Proficiency with computers including Microsoft Office (Word, Excel, PowerPoint), Outlook, Email and Internet
  • ServSafe certification

Job Duties

  • Plan regular and modified menus according to established guidelines
  • Follow standardized recipes, portioning and presentation standards
  • Complete and use daily production worksheets and waste log sheets
  • Taste completed meals to ensure quality
  • Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
  • Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
  • Maintain inventory to stay within established guidelines while assuring necessary product availability
  • Make decisions regarding utilization of leftover food products within company guidelines
  • Follow federal, state and local health and sanitation regulations and department sanitation procedures
  • Follow facility, department and company safety policies and procedures
  • Participate and attend departmental meetings, staff development, and professional programs as appropriate
