Job Requirements
- Five years of experience as a culinary chef with lead chef responsibilities
- culinary arts degree from a culinary arts institution or an approved combination of education and experience
- state of Minnesota Food Manager certification and ServSafe Certificate or ability to achieve within six months of hire
Job Qualifications
- Five years of experience as a culinary chef with lead chef responsibilities in hotels, resorts, clubs, restaurants or healthcare
- culinary arts degree from a culinary arts institution or an approved combination of education and experience
- preferred equivalent of two years of college preparation in culinary skills with training for quantity food preparation
- minimum of five years of food preparation, service and supervisory experience
- Certified Executive Chef by ACF
- state of Minnesota Food Manager certification and ServSafe Certificate or ability to achieve within six months of hire
Job Duties
- Monitor price trends of raw materials and supplies
- maintain inventory to meet the needs of supplies, equipment and commodities
- develop training materials related to proper sanitation, including food storage, temperature standards and food safety guidelines
- supervise, train and direct production staff on daily tasks, food assembly and presentation, ensuring compliance with sanitization, food safety and quality standards
- participate in menu planning for patient food services and retail operations
- hire non-exempt staff and conduct performance appraisals
- fulfill duties of cook or other food service staff when necessary
- perform other duties as assigned
