Job Requirements

  • Post-secondary education or culinary education preferred
  • Minimum five years relevant experience in food management
  • Experience in hotel food and beverage operations preferred
  • Strong management and leadership abilities
  • Knowledge of safety, sanitation and regulatory compliance
  • Skilled in budgeting, cost control and menu development
  • Excellent communication and interpersonal skills
  • Ability to work under pressure and meet deadlines
  • Availability to work regular hours and comply with attendance policies

Job Qualifications

  • Two plus years of post-high school education, culinary education preferred
  • Five plus years of related employment experience
  • Preferred hotel experience
  • Advanced knowledge of food profession principles and management practices
  • Knowledge of hotel operations including marketing, safety, personnel relations, budgeting, quality assurance and hospitality law
  • Strong leadership skills for staff motivation and goal achievement
  • Ability to work effectively under deadlines and time constraints
  • Effective verbal and written communication skills adapted to various audiences

Job Duties

  • Direct the day-to-day operations of all kitchen areas including outlets, banquets, stewarding, and purchasing
  • Manage human resources including interviewing, hiring, training, coaching, evaluating and disciplining kitchen staff
  • Plan and supervise procurement, production, preparation, and presentation of food in a safe and sanitary manner
  • Monitor and control maintenance and sanitation of kitchen and equipment to meet safety and health regulations
  • Develop, implement and manage department budget with focus on labor and food cost control
  • Create and update menus and backup documentation to improve revenue and profit while maintaining quality
  • Execute and promote accident prevention programs to minimize liabilities
  • Comply with attendance rules and be regularly available for work
  • Perform other assigned job-related duties
