Job Requirements
- 5+ years of kitchen management or executive chef experience
- Current ServSafe certification
- Experience in high-volume retail, entertainment, hospitality, or restaurant venue
- Ability to work in a fast-paced, high-volume environment
- Strong leadership and organizational skills
- Ability to recruit, train, and retain staff
- Ability to maintain sanitation and comply with health regulations
Job Qualifications
- Bachelor’s or culinary degree preferred
- 5+ years of kitchen management or executive chef experience
- Experience in high-volume retail, entertainment, hospitality, or restaurant venue
- Extensive experience in banquet style events
- Experience managing and developing teams
- Current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
- Strong leadership and organizational skills
- Excellent interpersonal and communication skills
- Ability to manage profit and loss
- Knowledge of local health and sanitation regulations
Job Duties
- Adhere to the company’s mandated F&B menu and purchasing programs
- Maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow as it relates to food operations
- Review monthly profit & loss statements and make adjustments as necessary
- Work with the Operations team and Sales staff to plan, supervise, and execute all events
- Supervise the preparation and service of all food and beverage including cleanup
- Assist with cooking when needed
- Estimate food consumption and make purchases as appropriate from the specified food program
- Schedule staff efficiently to accommodate shifts in business volume
- Work with center’s management to recruit, hire, train, and retain kitchen staff
- Develop key staff including sous chefs and lead cooks
- Ensure product quality, freshness, and presentation meet company standards
- Supervise and oversee preparation, portioning, garnishing, and storage of all food
- Facilitate and manage kitchen equipment maintenance
- Implement and conduct sanitation audits and cleaning schedules
- Comply with local Department of Health regulations
- Report critical issues to the General Manager
