Job Requirements

  • 5+ years of kitchen management or executive chef experience
  • Current ServSafe certification
  • Experience in high-volume retail, entertainment, hospitality, or restaurant venue
  • Ability to work in a fast-paced, high-volume environment
  • Strong leadership and organizational skills
  • Ability to recruit, train, and retain staff
  • Ability to maintain sanitation and comply with health regulations

Job Qualifications

  • Bachelor’s or culinary degree preferred
  • 5+ years of kitchen management or executive chef experience
  • Experience in high-volume retail, entertainment, hospitality, or restaurant venue
  • Extensive experience in banquet style events
  • Experience managing and developing teams
  • Current ServSafe certification required
  • ServSafe instructor certification or ability to be certified preferred
  • Strong leadership and organizational skills
  • Excellent interpersonal and communication skills
  • Ability to manage profit and loss
  • Knowledge of local health and sanitation regulations

Job Duties

  • Adhere to the company’s mandated F&B menu and purchasing programs
  • Maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow as it relates to food operations
  • Review monthly profit & loss statements and make adjustments as necessary
  • Work with the Operations team and Sales staff to plan, supervise, and execute all events
  • Supervise the preparation and service of all food and beverage including cleanup
  • Assist with cooking when needed
  • Estimate food consumption and make purchases as appropriate from the specified food program
  • Schedule staff efficiently to accommodate shifts in business volume
  • Work with center’s management to recruit, hire, train, and retain kitchen staff
  • Develop key staff including sous chefs and lead cooks
  • Ensure product quality, freshness, and presentation meet company standards
  • Supervise and oversee preparation, portioning, garnishing, and storage of all food
  • Facilitate and manage kitchen equipment maintenance
  • Implement and conduct sanitation audits and cleaning schedules
  • Comply with local Department of Health regulations
  • Report critical issues to the General Manager
