Job Requirements

  • significant culinary experience in a high volume hotel or fine dining environment
  • proven leadership and team management experience
  • knowledge of food safety and sanitation standards
  • ability to work flexible shifts including weekends and holidays

  • ability to manage budgets and control costs
  • proficiency with computer software applications relevant to culinary operations
  • physical ability to stand and walk for extended periods

Job Duties

  • Consistently offers professional, engaging, and friendly service
  • oversee daily operations of the Kitchen department including Banquets, Outlets, In Room Dining, Staff Cafeteria and Stewarding
  • execute the hotel's Strategic Plan as it relates to culinary areas
  • develop and prepare creative menus balancing guest requests and presentation
  • maintain food and beverage standards using safe food handling practices
  • monitor inventory levels and food cost controls to optimize profitability
  • prepare weekly staff schedules ensuring productivity and provide hands on support
  • maintain staffing levels through proactive recruiting
  • ensure timely performance management and training
  • participate in capital projects for kitchen and restaurant improvements
  • attend weekly operational meetings including Banquet Event reviews
  • ensure compliance with hotel controls and health and safety regulations
  • oversee menu creation for the staff restaurant
  • promote teamwork within the Kitchen department and build strong working relationships with other departments
  • respond personally to food-related feedback and produce proper reports
  • ensure maintenance of all kitchen equipment
  • participate actively in departmental and hotel meetings and committees
