Job Requirements
- High school diploma or equivalent
- 3 to 5 years of culinary management experience
- hands-on chef experience
- knowledge of food safety and sanitation regulations
- computer skills including Microsoft Office and e-mail
- ServSafe certification
- ability to work full time including rotating holidays and occasional weekends
- strong leadership and communication skills
- ability to maintain a safe and sanitary kitchen environment
- physical ability to perform kitchen duties necessary
Job Qualifications
- 3 to 5 years of culinary management experience depending on formal degree or training
- extensive catering experience is a plus
- experience in high volume, complex foodservice operations
- background in institutional and batch cooking
- hands-on chef experience required
- knowledge of current food and catering trends focusing on quality, production, sanitation, food cost control, and presentation
- proficiency with Microsoft Office Suite (Word, Excel, PowerPoint), Outlook, e-mail, and internet
- ServSafe certification
Job Duties
- Plan regular and modified menus according to established guidelines
- follow standardized recipes, portioning, and presentation standards
- complete and use daily production worksheets and waste logs
- taste completed meals to ensure quality
- train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation
- establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas
- maintain inventory within established guidelines
- make decisions regarding utilization of leftover food products within company guidelines
- comply with federal, state, and local health and sanitation regulations
- follow facility, department, and company safety policies and procedures
- participate and attend departmental meetings, staff development, and professional programs as appropriate
