Job Requirements

  • kitchen management or executive chef experience of five years or more
  • educational background in culinary arts or related field preferred
  • experience working in fast-paced, high-volume retail or hospitality environments
  • strong leadership and team development skills
  • current valid servsafe certification
  • ability to plan and execute catered events
  • excellent organizational and communication skills
  • ability to comply with health and safety regulations
  • physical ability to perform duties in an entertainment center environment including standing for long periods and lifting with assistance

Job Qualifications

  • five plus years of kitchen management or executive chef experience
  • bachelors or culinary degree preferred
  • experience in high-volume retail, entertainment, hospitality, or restaurant venue
  • extensive experience in banquet style events
  • experience managing and developing teams
  • current servsafe certification
  • servsafe instructor certification or ability to be certified preferred

Job Duties

  • adhere to the companys mandated f&b menu and purchasing programs
  • maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow related to food operations
  • review monthly profit and loss statements and make adjustments as necessary
  • work with operations and sales teams to plan, supervise, and execute all events including preparation, service, and cleanup
  • assist with cooking when needed
  • estimate food consumption and make purchases accordingly
  • schedule staff efficiently to accommodate business volume shifts
  • recruit, hire, train, and retain kitchen staff
  • develop key staff including sous chefs and lead cooks
  • ensure product quality, freshness, and presentation meet company standards
  • supervise food preparation, portioning, garnishing, and storage
  • manage kitchen equipment maintenance and conduct sanitation audits and cleaning schedules
  • comply with local department of health regulations
  • report critical issues to general manager
