Job Requirements
- kitchen management or executive chef experience of five years or more
- educational background in culinary arts or related field preferred
- experience working in fast-paced, high-volume retail or hospitality environments
- strong leadership and team development skills
- current valid servsafe certification
- ability to plan and execute catered events
- excellent organizational and communication skills
- ability to comply with health and safety regulations
- physical ability to perform duties in an entertainment center environment including standing for long periods and lifting with assistance
Job Qualifications
- five plus years of kitchen management or executive chef experience
- bachelors or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venue
- extensive experience in banquet style events
- experience managing and developing teams
- current servsafe certification
- servsafe instructor certification or ability to be certified preferred
Job Duties
- adhere to the companys mandated f&b menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow related to food operations
- review monthly profit and loss statements and make adjustments as necessary
- work with operations and sales teams to plan, supervise, and execute all events including preparation, service, and cleanup
- assist with cooking when needed
- estimate food consumption and make purchases accordingly
- schedule staff efficiently to accommodate business volume shifts
- recruit, hire, train, and retain kitchen staff
- develop key staff including sous chefs and lead cooks
- ensure product quality, freshness, and presentation meet company standards
- supervise food preparation, portioning, garnishing, and storage
- manage kitchen equipment maintenance and conduct sanitation audits and cleaning schedules
- comply with local department of health regulations
- report critical issues to general manager
