Job Requirements
- High school diploma or equivalent
- Proven experience in culinary management and high-volume catering
- Strong leadership and communication skills
- Ability to develop creative and cost-effective menus
- Knowledge of food safety and sanitation regulations
- Ability to work flexible hours including evenings, weekends, and holidays
- Physical ability to stand, walk, bend, and perform duties for extended shifts
- Proficiency in computer and labor management tools
- Previous experience in a hotel or resort culinary environment preferred

- Experience in high-volume catering with hotel top brands and fine dining
- Proven leadership and managerial skills supporting colleague growth and interdepartmental teamwork
- Current knowledge of culinary trends and personal culinary development

- Proven financial planning skills with ability to analyze data and implement improvement strategies
- Knowledge and support of corporate programs

Job Duties
- Consistently offers professional, engaging, and friendly service
- Oversee daily operations of the Kitchen department including banquets, outlets, in-room dining, staff cafeteria and stewarding
- Responsible for the execution of the hotel's Strategic Plan related to all culinary areas
- Role model service promises and ensure focus on delivery of service essentials
- Develop and prepare menus balancing creativity, guest requests, presentation and food quality
- Maintain food and beverage standards using standardized recipes and safe food handling
- Optimize profitability through inventory monitoring, food cost controls, and promotional initiatives
- Use labor management tools to set and monitor staffing levels and productivity
- Prepare weekly schedules and provide hands-on support
- Maintain staffing levels through proactive recruiting
- Ensure timely performance management and training
- Participate in development and implementation of kitchen and restaurant capital projects
- Participate in weekly operational and banquet event meetings
- Ensure compliance with operating controls and seek innovative performance improvements
- Oversee menu creation for staff restaurant ensuring high-quality products
- Promote teamwork within the Kitchen department and maintain relationships with other departments
- Participate in media and community opportunities to showcase food and beverage products
- Ensure compliance with municipal and state laws regarding hygiene and security
- Respond to food-related feedback and maintain reporting processes
- Ensure kitchen equipment is well maintained
- Actively participate in department head and food & beverage meetings and support colleague engagement in hotel committees
