Job Requirements

  • Degree in culinary arts
  • Minimum 5 years experience as an executive chef
  • Food safety and manager certification
  • Ability to read and interpret safety rules and procedure manuals
  • Ability to write routine reports and correspondence
  • Ability to communicate effectively
  • Ability to perform basic math operations
  • Ability to solve practical problems
  • Willingness to stand, bend, walk, and lift up to 50 pounds
  • Experience in a unionized setting preferred
  • Experience with Latin cuisine preferred
  • Bilingual (English/Spanish) preferred.

  • Competency in basic math including addition, subtraction, multiplication, division, rate, ratio, and percent
  • Problem-solving skills with a practical approach to concrete variables
  • Prior experience in a unionized setting preferred
  • Experience with Latin cuisine preferred
  • Bilingual (English/Spanish) preferred.

Job Duties

  • Ensure excellence in guest satisfaction through commitment to exceeding expectations and hands-on leadership
  • Manage all back-of-house staff including hiring, ongoing training, development, scheduling, payroll, performance evaluation, and discipline
  • Plan menus, develop standardized recipes, and oversee food presentation quality
  • Oversee food and supplies inventory and ordering on a weekly and monthly basis
  • Maintain sanitation procedures adhering to OSHA regulations and enforce strict health and hygiene standards
  • Prepare operational reports, analyze trends and recommend improvements
  • Coordinate with front-of-house management regarding service issues and expedite meals during service
  • Recruit staff, monitor performance and implement staff development and apprenticeship programs
  • Manage culinary budget achieving labor and food cost targets while maintaining food quality
  • Supervise daily cleaning of kitchen areas and assign appropriate duties to staff
  • Identify new culinary techniques and source new products to constantly improve food production and menu offerings
  • Ensure all kitchen staff adhere to standard recipes and produce meals within set time frames
  • Motivate staff through example and maintain discipline
  • Foster positive workplace culture in collaboration with Corporate Chef
  • Participate in service education through daily line-ups, menu meetings, and new server training programs
  • Resolve any kitchen-related problems promptly and effectively
  • Maintain overall profitability of the kitchen
  • Liaise with government regulators to ensure compliance and up-to-date certifications.
