Job Requirements
- High school diploma or equivalent
- 3 to 5 years of culinary management experience
- Hands-on culinary experience
- Ability to train and lead kitchen staff
- Knowledge of food safety and sanitation regulations
- Competency in inventory and cost control
- Familiarity with Microsoft Office and general computer skills
- ServSafe certification
- Ability to work full time primarily Monday through Friday with rotating holidays and occasional weekends
- Ability to maintain a safe and sanitary work environment
- Effective communication and leadership skills
Job Qualifications
- 3 to 5 years of culinary management experience depending on formal degree or training
- Extensive catering experience
- Experience with high volume, complex foodservice operations
- Institutional and batch cooking experience
- Hands-on chef experience
- Knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- Experience with computers including Microsoft Office, Outlook, email and internet
- ServSafe certified
Job Duties
- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning, and presentation standards
- Complete and use daily production worksheets and waste log sheets
- Taste completed meals to ensure quality
- Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation
- Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas
- Maintain inventory within established guidelines while assuring necessary product availability
- Make decisions regarding utilization of leftover food products within company guidelines
- Follow federal, state, and local health and sanitation regulations and department sanitation procedures
- Follow facility, department, and company safety policies and procedures including occurrence reporting
- Participate and attend departmental meetings, staff development, and professional programs
