The Cook position at Courtyard Las Vegas, located at 5845 Dean Martin Drive, is a critical culinary role responsible for preparing high-quality food for both the Bistro and Banquets operations. This position demands adherence to standardized recipes and the highest quality standards to ensure all food products are appealing and appetizing. The Cook is also responsible for maintaining excellent sanitation, safety practices, and cleanliness in the kitchen, ensuring compliance with health regulations, and actively contributing to minimizing food waste while maximizing cost efficiency.

The role involves a variety of culinary duties including preparing food for banquets, handling all food prep and storage tasks, ensuring quality in fresh ingredients such as vegetables, fish, dairy, and meats, and supporting various kitchen stations as needed. The Cook must be skilled in multiple cooking techniques such as charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking. Additionally, a good understanding of herbs and spices is essential for proper food seasoning and preparation.

This position requires physical endurance to stand during entire shifts, handle medium work involving lifting and moving objects up to 50 pounds, and tolerate temperature variations within the kitchen environment. Flexibility in working hours is necessary, as long shifts may occasionally be required. The Cook plays a vital role in orchestrating smooth kitchen operations, ensuring prompt and efficient service to guests, and maintaining the impeccable standards associated with the Highgate brand. Job Requirements

  • High school diploma or equivalent
  • Culinary experience in hotel or related field preferred

Job Qualifications

Job Duties

  • Maintain cleanliness and organization of all storage areas
  • Complete necessary food and station preparation prior to the opening of the restaurant
  • Prepare and display food items according to hotel standards
  • Recognize quality standards in fresh vegetables, fish, dairy and meat products
  • Maintain clean and sanitary environment with proper handling, storage, and sanitation
  • Prepare food for banquets following banquet event orders
  • Prepare all foods following hotel standard recipes
  • Assist in preparation of specials under supervision
  • Breakdown buffets and kitchen line, storing food and equipment properly
  • Work banquet food stations as scheduled
  • Know location and operation of fire extinguishing equipment
  • Practice safe work habits
  • Use production charts as specified by hotel standards
  • Support any kitchen position in need of help
  • Follow health department and company food safety regulations
  • Operate and clean kitchen equipment
  • Maintain a clean-as-you-go policy
  • Assist in food storage and rotation
  • Sign keys out and in under supervision as needed
