The position available is primarily focused on food preparation and cooking, specifically handling whole chickens and other grilled products. This role requires the employee to prepare, cook, store, and cut whole chickens, maintain proper handling techniques, and ensure food safety and quality standards are met throughout the cooking and serving process. The employee will work under the supervision of the Assistant and General Managers, contributing as a vital part of the kitchen and food preparation team. Responsibilities also include cleaning and sanitizing the entire work area and maintaining an organized kitchen according to company guidelines.

Employees in this position will follow strict food handling procedures, using the First In, First Out (FIFO) system for storage rotation to maintain freshness and compliance with health regulations. The role demands continuous monitoring of cooked products to ensure they meet quality and temperature standards, as well as correctly packaging and presenting food items. This is an active role that requires physical stamina and attention to detail to maintain the company’s high standards in food quality, safety, and customer service.

Additionally, this position involves assisting in training new cooks and cold prep personnel, working collaboratively with other team members, and occasionally supporting other kitchen duties as assigned by supervisors. The restaurant prioritizes a clean and sanitary work environment, mandating regular cleaning of equipment, tools, storage containers, and work surfaces. The role also requires compliance with government health risk regulations related to food handling and preparation.

Job Requirements

  • Must be at least 18 years old to cut chicken
  • Must meet government regulations for food handling
  • Must have ability to understand and follow company recipes
  • Must have basic math skills
  • Must have sufficient mobility to move or operate in work area
  • Ability to lift up to 75 pounds with assistance
  • Ability to stand and walk for prolonged periods
  • Must be able to work under heavy stress and pressure

Job Qualifications

  • High school diploma or equivalent preferred
  • Prior experience in food preparation or cooking preferred
  • Knowledge of food safety and sanitation standards
  • Ability to follow recipes and food handling procedures
  • Basic math skills including units of measurement
  • Ability to work under pressure during peak times

Job Duties

  • Follow company food handling and safety procedures
  • Rotate and organize products in storage areas using FIFO method
  • Inspect whole chickens and raw meats for quality standards
  • Prepare, marinate, and season whole chicken
  • Thaw and store raw meats as needed
  • Maintain proper levels of meats cooking throughout shift
  • Cook whole chicken and grilled products to company standards
  • Receive orders and cut whole chicken
  • Arrange chicken for presentation or packaging
  • Cut, stock, and rotate grilled products
  • Monitor cooked chicken quality and take corrective actions
  • Note holding time of grilled products
  • Ensure cooked meats are at proper serving temperature
  • Assist expediter and burrito assembly when needed
  • Clean and sanitize work area and equipment
  • Assist in training new cooks and cold prep persons
  • Perform additional duties as assigned by supervisor
  • Store food shipments using FIFO system
  • Inspect cold food ingredient quality
  • Prepare and package cold food products as per standards
  • Move packaged items to proper coolers and rotate
  • Maintain cleanliness of work area
