Job Description

This job opportunity is with a well-established restaurant known for its commitment to quality and food safety standards. The position is designed for individuals who are passionate about food preparation and maintaining high sanitation standards in a fast-paced kitchen environment. The role primarily involves preparing, cooking, storing, and cutting whole chicken and other grilled products according to company procedures. You will report to the Assistant and General Manager, working closely with other kitchen staff to ensure an exceptional customer experience through well-prepared food items that meet safety and quality standards.

This position requires attention to detail as you will be responsible for rotating stock using FIFO (first-in, first-out) methods, inspecting raw meats for quality, marinating and seasoning, and properly cooking food items to the company's specified standards. You will need to monitor the holding times of grilled products, ensuring they are served at the correct temperature and meet quality requirements throughout your shift. The role also involves assisting other kitchen stations such as the expediter and burrito assembly, as well as training new cooks and cold prep personnel.

Sanitation and cleanliness are critical components of the job. The successful candidate will be expected to thoroughly clean and sanitize work areas, equipment, tools, and storage containers regularly to comply with health and safety regulations. Physical stamina and the ability to work under high stress during peak meal periods are essential, given the physical demands including lifting, bending, stooping, and standing for extended periods. The job also exposes workers to temperature variations including heat, steam, cold, and kitchen odors.

Job Duties

  • Follows company food handling and safety procedures
  • rotates and organizes products in storage areas using the FIFO method
  • inspects whole chickens and other raw meats for acceptable quality standards
  • prepares, marinates and seasons whole chicken
  • thaws and stores all other raw meats to projected needs
  • maintains proper levels of whole chicken and other meats cooking throughout shift based on projections and actual business activity
  • cooks whole chicken and other grilled products according to company standards
  • receives orders and cuts whole chicken
  • arranges chicken for proper presentation on plate or in packaging
  • cuts, stocks, and rotates all other grilled products according to company standards and projected needs
  • monitors quality of cooked chicken
  • takes correct action when hold time expires or when product quality fails to meet company standards
  • notes holding time of grilled products
  • maintains and ensures that all cooked meat products are at proper serving temperature
  • regularly assists expediter and burrito assembly person
  • cleans and sanitizes entire work area including all equipment, tools, and storage containers
  • assists in training new cooks
  • periodically performs additional duties as assigned by direct supervisor
  • stores shipments of food products using the FIFO system of rotation
  • rotates and organizes products in walk-in using the FIFO method
  • inspects all cold food product ingredients for acceptable quality standards
  • prepares and packages all cold food products according to projected needs per company quality standards
  • moves packaged items to proper front line and drive-thru coolers
  • stacks and rotates products
  • assists in training new cold prep persons
  • periodically performs additional duties as assigned by direct supervisor
