The role of kitchen steward at JW Marriott is pivotal in maintaining the cleanliness, sanitation, and overall hygiene of the kitchen and storage areas. This position involves operating and maintaining various cleaning equipment, including dish washing machines, hand wash stations, pot-scrubbing stations, and trash compactors. The kitchen steward is responsible for washing and disinfecting all kitchen surfaces, tools, knives, and equipment, ensuring that clean wares are correctly stored and that perishables are received, stored properly, and rotated according to health and safety standards. This role requires meticulous attention to detail in the use of detergent, rinsing, and sanitizing chemicals, particularly in the three-compartment sink system used for cleaning dishes. Additionally, the kitchen steward inspects and sorts cleaned items, manages soiled items for re-washing, and maintains cleanliness of trays, silverware, and bus tubs. Responsibilities also extend to waste management, including emptying and maintaining trash cans and dumpsters, recycling, and cardboard box breakdown.

The kitchen steward must adhere strictly to Marriott's company policies and safety protocols, reporting any maintenance needs, injuries, or unsafe conditions to management to ensure a safe working environment. Physical demands of the job include moving, lifting, and carrying objects up to 50 pounds, standing for extended periods, and reaching or bending as required.
