Job Description

The role of Kitchen Dishwasher is integral to the company’s commitment to maintaining a spotless and sanitary environment in the kitchen. The employee in this position is responsible for cleaning and sanitizing all dishware, pots, pans, and kitchen equipment utilizing dish machines and pot sinks efficiently. Beyond maintaining the cleanliness of utensils and cookware, this role includes sanitizing kitchen counters, tables, cabinets, sinks, ranges, ovens, and floors throughout the kitchen space. The Dishwasher also manages supply requisitions to ensure all necessary cleaning materials are available to carry out their responsibilities. This position plays a crucial part in the daily operations by supporting food preparation, organization, and sanitation while adhering to established health and safety protocols.
The successful candidate will prepare tableware for washing, removing food residue, and sorting items like china, glassware, and silverware into appropriate racks for effective cleaning. The role requires setting up and operating dishwashing machines, including monitoring soap and rinse levels, cleaning food catches, and ensuring dishes are air-dried properly before restocking. Additionally, the Dishwasher is responsible for the cleanliness of the dish machine after each shift, garbage management, sweeping and mopping floors, and cleaning kitchen equipment exteriors, walls, ceiling tiles, and exhaust hood filters as needed. The position also involves filtering deep fat fryer oil and occasionally assisting with food preparation, stocking deliveries, and plating during banquet and party events.
This position demands the ability to work in a fast-paced, physically demanding environment, often requiring standing for long periods, lifting heavy trays or stacks of dishes, and performing repetitive motions. Flexibility to work evenings, weekends, and holidays is essential, as is a reliable and punctual work ethic. Attention to detail and a basic understanding of food safety and sanitation principles are critical to ensuring the health and safety of kitchen operations. Job Requirements
- Ability to stand for long periods, often entire shifts
- Ability to lift up to 40-50 lbs, e.g., trays, stacks of dishes
- Comfortable with repetitive motions, scrubbing, loading/unloading racks
- Ability to work in hot, humid, and sometimes noisy environments
- Time management skills, handling multiple tasks in a fast-paced environment
- Attention to detail ensuring dishes are thoroughly cleaned and sanitized
- Basic knowledge of sanitation and food safety

Job Qualifications
- Previous dishwashing experience preferred
- High school diploma or equivalent preferred
- Basic understanding of food safety and sanitation principles
- Ability to operate dishwashing machines
- Strong work ethic and reliability
- Good communication skills
- Ability to follow instructions and work as part of a team
Job Duties
- Prepares tableware for washing, receives tableware to be washed and removes food residue
- Sorts china, glassware, and silverware, placing each in separate rack or trays
- Sets up dishwashing machine, checks soap and rinse agents to make sure that they are full
- Cleans out food catches and fills dishwasher with hot water to proper level
- Turns on machine and places racks of dirty glasses, china, or silverware at machine so as the conveyer pulls the rack into the machine
- After dishes come out of the machine, lets them sit for a minute or so to air dry
- Stacks or re-stacks clean dinnerware and returns it to its proper place
- Cleans dish machine both inside and out after each shift
- Examines garbage for silverware and dishes
- Empties all kitchen garbage cans at the end of each shift and at the end of the evening
- Sweeps and mops the floor as necessary
- Sends dirty bus tubs through machine at the end of each shift for cleaning
- Responsible for the organization, cleanliness and sanitation of the dishroom area
- Performs other tasks such as assisting in food preparation, putting away deliveries, cleaning coolers, freezers, and store rooms, and plating up food for banquets and parties
- Cleans and sanitizes all tables and countertops and sinks throughout the kitchen regularly
- Cleans exterior of all equipment on the line on a daily basis
- Filters deep fat fryer oil and cleans out as needed
- Cleans walls and ceiling tiles as needed
- Cleans exhaust hood filters and surrounding hood areas as needed
- Performs other duties as prescribed by the Chef
