The Director of Food and Beverage role at Hilton Des Moines Downtown is a pivotal leadership position responsible for overseeing all aspects of the food and beverage operations within the hotel. This includes direct management of flagship outlets such as the Park Street Bar, Park Street Kitchen, and the In-Room Dining services, as well as the culinary and banquet departments. The ideal candidate will be an innovative, hands-on leader with a deep focus on team development and financial performance. The Director is entrusted with planning, directing, and controlling the food and beverage functions to meet high standards of quality and service while achieving budgetary goals.

Key responsibilities involve coordinating between different sub-departments such as kitchens, banquets, and stewards, ensuring smooth operation and profitable scheduling. There is a strong emphasis on collaboration with chefs and restaurant managers in menu development and merchandising to attract and retain customer interest. The Director must closely monitor all costs related to food, beverage, and labor and implement effective controls to maintain financial health. Job Requirements

  • Bachelor's degree or equivalent experience
  • Minimum of 5 years in food and beverage leadership roles
  • Hands-on experience managing multiple food and beverage outlets

  • Proficient in budgeting and financial performance management
  • Familiarity with Hilton brand standards and hospitality best practices
  • Ability to work flexible hours including nights, weekends, and holidays

Job Qualifications

  • Bachelor's degree in hospitality management, business administration, or related field preferred
  • Extensive experience in food and beverage management, preferably in a full-service hotel environment

Job Duties

  • Plan and direct functions of administration and food and beverage planning to meet operational needs
  • Describe, assign, and delegate responsibility for food and beverage sub-departments such as room service, restaurants, banquet, kitchens, and stewards
  • Monitor and develop operational schedules for restaurants and bars to ensure profitability
  • Collaborate with chefs and restaurant managers on menu design and merchandising to attract customers
  • Implement controls on food, beverage, and labor costs and monitor budgets to remain within limits
  • Assist managers to achieve profit goals and quality standards in food, service, and cleanliness
  • Review customer satisfaction and address complaints promptly
  • Develop operating tools like budgeting, forecasting, purchase specifications, recipes, and job descriptions
  • Ensure compliance with Hilton policies and local, state, and federal regulations related to food and beverage operations
