Mayo Civic Center is a premier convention and event venue located in Rochester, MN, well-known for hosting a variety of events ranging from concerts, conventions, sports events to community gatherings. The Director of Food & Beverage at Mayo Civic Center holds a key leadership position responsible for the strategic direction, management, and operational excellence of all food and beverage services within the venue. This role is critical in ensuring that food and beverage operations including concessions, premium hospitality, catering, and special event sales are delivered with a commitment to quality, customer satisfaction, and financial performance. The Director leads multiple teams and closely collaborates with venue partners, clients, and stakeholders to uphold service standards and drive business growth. This full-time position offers a competitive salary reflective of experience and is based on-site in Rochester, MN.

The Director’s responsibilities encompass budgeting, financial oversight, operational planning, and compliance with food safety and liquor regulations. This leadership role also extends to business development by fostering new client relationships and promoting food and beverage services to enhance revenue growth. The Director plays a vital role in ensuring all facilities and equipment comply with health codes and internal policies, maintaining both cost control and quality standards. Physical demands include the ability to walk long distances and handle some lifting, ensuring effective supervision across the facility. Job Requirements

  • Bachelor's degree in hospitality management, business administration, food & beverage management, or related field preferred
  • Minimum 5 years of leadership experience in food and beverage operations within a large venue, arena, convention center, or hospitality environment
  • Experience with budgeting, financial forecasting, labor management, and operational planning
  • Experience with vendor management, purchasing procedures, and contract negotiations preferred
  • Experience working in union environments is a plus
  • ServSafe or Food Handler Certification within 30 days of hire
  • Ability to work flexible hours including nights, weekends, and holidays
  • Ability to pass background check
  • Ability to lift at least 50 lbs
  • Ability to walk long distances during the workday

Job Duties

  • Review, approve, and monitor budgets, making recommendations regarding adjustments as needed
  • Analyze food sales, attendance, and labor data to maintain cost control and operational efficiency
  • Oversee food and beverage sales projections and budget performance for all assigned events and accounts
  • Ensure high standards of guest service and client satisfaction during all events
  • Develop and implement operational standards across all food and beverage operations
  • Support new business development initiatives by identifying opportunities for new clients, contracts, permits, and partnerships
  • Direct growth of food and beverage accounts by promoting services to new and existing clients
