The Grand Bay is currently seeking a Director of Food and Beverage, a pivotal leadership role entrusted with overseeing the entire food and beverage operation within the hotel. This position demands a dynamic and experienced professional who can lead a high-performing team, manage various sub-departments including restaurants, room service, banquet operations, kitchens, and stewarding, ensuring the delivery of exceptional food and beverage quality, service, and merchandising excellence. The Director of Food and Beverage will be responsible for driving profitability through strategic planning, cost control, marketing initiatives, and maintaining strict adherence to health, safety, and alcohol service regulations. This role requires strong communication skills and a hands-on approach to managing and developing talent, fostering an environment of teamwork and continuous improvement.
The successful candidate will be integral in defining the hotel’s food and beverage standards, creating innovative menus tailored to attract desired customer segments, and implementing operational tools such as budgeting, forecasting, and food production control. They will regularly assess guest satisfaction and market conditions, adjusting policies and practices to sustain competitive advantage. Job Requirements
- Bachelor’s degree or equivalent experience preferred
- Proven leadership experience in food and beverage management
- Strong organizational and planning skills
- Ability to lift and carry up to 50 pounds
- Excellent interpersonal and conflict resolution skills
- Must be willing to comply with attendance rules and be available to work regularly
- Ability to adapt to change and learn new skills
- Must comply with all safety and security policies
Job Qualifications
- Minimum of 4 years of full service hotel experience
- Some independent or Marriott experience preferred
- Comprehensive knowledge of food and beverage preparations, service standards, guest relations and etiquette
- Knowledge of the appropriate table settings and service ware
- Familiarity with federal, state and local health and safety regulations
- Strong leadership and team management skills
- Excellent communication abilities both verbal and written
- Ability to perform complex mathematical calculations accurately
- Ability to use computer systems for operations and reporting
Job Duties
- Interview, hire, train, recommend performance evaluations, resolve problems, provide open communication and recommend discipline and/or termination when appropriate
- Plan and direct the functions of administration and planning of the Food and Beverage Department to meet the daily needs of the operation
- Clearly describe, assign and delegate responsibility and authority for the operation of the various food and beverage sub-departments, e.g. room service, restaurants, banquets, kitchens, steward, etc
- Develop, implement and monitor schedules for the operation of all food and beverage sub-departments to achieve a profitable result
- Participate with Food and Beverage managers in the creation of menus designed to attract a predetermined customer market
- Implement effective control of food, beverage and labor costs among all sub-departments to Crescent standards
- Abide by all State, Federal and Corporate requirements pertaining to serving alcoholic beverages
