Job Description

Located in the vibrant heart of Century City, this newly reimagined luxury hotel is set to debut in late 2026, marking a distinct transformation in Los Angeles' hospitality landscape. This upscale property will feature approximately 360 thoughtfully appointed guest rooms and suites, blending modern, understated luxury with a fresh perspective that caters to both travelers and locals alike. The hotel will be a dynamic destination boasting a lively lobby bar, a signature restaurant, an outdoor pool, and a bar and lounge area offering sweeping city views. Each space is designed to provide an exceptional, immersive experience that captures the essence of Los Angeles' sophisticated urban culture.

The opportunity at hand is for a Director of Food & Beverage to lead all culinary and beverage operations at this new luxury establishment. This is a unique leadership role ideal for a strategic and hands-on professional with a wealth of experience in upscale or boutique hotels and independent restaurants. The Director will be pivotal during the pre-opening phase, working closely with ownership and a renowned restaurant group to shape and execute the hotel’s full dining experience. This role demands a global culinary perspective coupled with sharp business acumen to develop an innovative food and beverage vision that is both approachable and refined, emphasizing New American-forward dining.

As a key member of the leadership team, the Director of Food & Beverage will oversee multiple outlets, including restaurants, bars, lounges, in-room dining, banquets, and special events. The role is responsible for recruiting, training, and developing a strong, engaged culinary and service team that prioritizes associate morale and retention. The successful candidate will establish a leadership culture based on education, mentorship, accountability, and respect, understanding that exceptional guest experiences start with motivated and supported associates.

Financial stewardship forms a critical component of this role, including managing budgets, forecasting, inventory, and controlling food and beverage costs and labor to meet operational goals. The Director will also drive innovation through seasonal menus, local sourcing, global culinary influences, tasting menus, and exclusive VIP experiences. Maintaining the highest quality and safety standards across all dining venues is paramount.

Job Requirements

  • 5+ years of progressive food and beverage leadership experience including senior-level roles in luxury or upscale hotel environments
  • Proven success overseeing multiple outlets and leading both culinary and front-of-house teams
  • Strong knowledge of global cuisines and the ability to translate them into a refined New American-forward dining experience
  • Demonstrated business acumen with a strong understanding of cost control, budgeting, forecasting, and labor management
  • Experience with hotel pre-openings or major renovations strongly preferred
  • Excellent leadership, communication, and organizational skills
  • Ability to thrive in a fast-paced, hands-on pre-opening environment with flexible scheduling requirements

Job Duties

  • Provide strategic and operational leadership for all food and beverage outlets including restaurants, bars, lounges, in-room dining, banquets, and special events
  • Partner with the Restaurant Group and ownership to define and execute the property’s overall food and beverage vision and positioning
  • Lead recruitment, training, education, and ongoing development of culinary, beverage, and service teams with a strong focus on associate engagement, morale, and retention
  • Establish a leadership culture rooted in education, mentorship, accountability, and respect
  • Oversee menu development, beverage programming, pricing strategy, and consistent quality execution across all outlets
  • Maintain the highest standards of food quality, service, presentation, sanitation, and safety
  • Manage budgets, forecasting, inventory, food and beverage costs, and labor to achieve financial and operational goals
  • Drive innovation through seasonal programming, local sourcing, global influences, tasting menus, and elevated VIP experiences
  • Ensure seamless coordination between culinary, service, and operations teams during pre-opening and ongoing operations
