The role of Dietary Manager/Executive Chef at Sunrise Vista Behavioral Hospital is integral to ensuring that nutrition and dietary needs are met within this behavioral health setting. This position operates primarily from Monday through Friday, with occasional weekend shifts when necessary, covering morning hours from 7 AM to 3 PM. The Dietary Manager/Executive Chef is responsible for managing the dietary services by maintaining a rotating menu and ordering supplies within established budgets, ensuring that menus are both appealing and aligned with patient needs. Critical to this role is adherence to food safety regulations, including proper storage, labeling, and dating of food items as guided by standards. The manager also oversees the HACCP programs, checks food temperatures, and upholds sanitation and food safety practices rigorously. Preparing meals that emphasize both taste and attractiveness according to the menu cycle is another key function, alongside direct interaction with patients and staff to model exemplary customer service. Additionally, the role involves assisting with cleaning duties, ensuring that kitchen staff follows scheduled cleaning procedures, and maintaining kitchen equipment. Scheduling dietary staff and coordinating snack offerings to align with resident preferences and physician orders is a further responsibility. The position demands upholding safety, infection control, and emergency procedures at all times while also coaching and training dietary staff to maintain high standards within the department.
