Job Requirements
- Must possess or obtain an Arizona Food Handler's Card or an ANSI-accredited food employee training course certification prior to hire
- Positions in Detention are subject to Tuberculosis (TB) testing with a negative result required prior to start
- Ability to stand for long periods, walk, use hands to grip or grasp, reach with hands and arms, bend or twist, push, pull, lift and carry up to 50 pounds
- Willingness to work indoors with varying temperatures and exposure to dust, chemicals, fumes, and odors
- Capability to work with hazardous and hot kitchen equipment
- Must be able to work in a secured detention facility and interact appropriately with detained youth
Job Qualifications
- Minimum two years general experience in food preparation and service in a restaurant or food service environment or equivalent culinary education
- Knowledge of meal planning and preparation
- Knowledge of portion control and diet preparation
- Knowledge of cleaning and sanitation of equipment and food service facilities
- Knowledge of proper food handling techniques
- Skill in complying with health standards
- Skill in maintaining and inventorying supplies
- Skill in appropriately portioning meals
- Ability to prepare meals
- Ability to operate kitchen equipment
- Ability to communicate inventory needs to the Food Services Manager
Job Duties
- Prepare and serve all items as written in established recipes and special diet orders
- Plan food production to coordinate with meal service hours to preserve excellence, quality, temperature, and appearance of food
- Determine amount and type of food and supplies required for daily menus and ensure timely supply retrieval
- Safely operate various kitchen equipment including oven, steamer, slicer, and mixers
- Maintain workstation in a safe and sanitary condition
- Assist in setting up and serving food, preparing food for service areas
- Prepare for dishwashing, pot and pan washing, and utensil washing
- Clean and sanitize production equipment, work surfaces and kitchen according to cleaning schedules and procedures
- Empty trash containers and mop floors
- Maintain inventory and equipment control and monitor food waste
