The Demi Chef de Partie role at Pebble Beach Company is a critical position within the culinary team that demands meticulous attention to quality and creativity. The Demi Chef de Partie is entrusted with preparing an array of dishes, including cold sandwiches, salads, dressings, hot food items, and sauces such as butter sauces and other classic preparations. This position requires proficiency in a variety of cooking techniques including frying, grilling, baking, roasting, and poaching, along with the skill to carry out vegetable preparation with precision in slicing and dicing.

In addition to food preparation, the role encompasses organizational and leadership responsibilities like task assignment to kitchen staff under supervision, maintaining recipe accuracy, assisting in menu reviews, and ensuring the mise en place is adequately prepared.   • six years kitchen experience including two years in equivalent position at a premier restaurant, resort or hotel
  • basic hot and cold food cooking knowledge
  • proficient knife skills
  • ability to work and know standards of quality and production in pantry, Stillwater Bar & Grill, Gallery Cafe, The Tap Room and banquets

  • six years of kitchen experience including two years in an equivalent position at a premier restaurant, resort or hotel
  • basic hot and cold food cooking knowledge
  • proficient knife skills
  • ability to work and know standards of quality and production in pantry, Stillwater Bar & Grill, Gallery Cafe, The Tap Room and banquets
  • graduate of accredited culinary program or apprenticeship desirable

Job Duties

  • Assign tasks to employees with the approval of team leaders
  • prepare cold food sandwiches, salads, and dressings
  • perform basic vegetable prep including slicing, dicing, and proper handling
  • prepare and handle meat, fish, vegetables, and starches
  • conduct basic hot food preparation including frying, grilling, baking, roasting, and poaching techniques
  • prepare sauces such as saucier, butter sauces, and all other sauces
  • prepare menu items including soups and sauces as directed
  • handle employee dining room cooking and salad bar setup
  • keep recipe cards accurate and assist in preparing new cards for specials or new menus
  • assist in periodic menu reviews and revisions
  • work both sides of Stillwater Grill, Tap Room, and banquet stations
  • set up mise en place for the station
  • set up buffet stations and perform carving or designated station functions
  • direct food preparation maintaining highest culinary standards
  • create high quality daily specials before service
  • maintain schedules of soups and specials
  • time cooking to ensure simultaneous entree completion
  • check food quality and consistency
  • arrange food for attractive presentation
  • assist with banquet dish up
  • add garnishes to plates
  • support other cooks and lines fostering teamwork
  • assist in special events
  • be cost conscious
  • rotate food in storage to ensure freshness and reduce waste
  • maintain cleanliness of work areas and refrigeration
  • clean and care for equipment and cooking surfaces
  • report faulty equipment or unsafe conditions to team leader
  • help train new employees on responsibilities and kitchen organization
  • coordinate with butcher for product consistency and inventory
  • contribute needed items to daily food orders
  • communicate production schedules with team leaders
  • suggest improvements for food quality and presentation
  • comply with all safety, health, and sanitation policies
